Whole Orange Cake

1 cup sugar
3 whole eggs
1 ¾ c all-purpose flour
2 ½ tsp baking powder
1/3 cup butter, softened.
1/3 cup plain yogurt or sour cream
1 tsp vanilla extract
2 whole oranges
Glaze: Juice of one orange
1/3 cup sugar
-Preheat oven to 350 degrees F
-Spray a springform pan or high sided cake pan with pan release and line bottom with parchment or waxed paper
-Beat 1 cup sugar and eggs until pale yellow, fluffy, and thick
-In separate bowl, mix flour and baking powder
-Slowly add flour mixture to egg and sugar mixture until combined
-Add butter and yogurt and mix until combined
-Add vanilla and mix quickly
-Cut one of the whole, unpeeled orange into chunks and process well in blender/ food processor, fold that into the cake batter
-Add batter to prepared pan and bake 50-60 minutes until pick comes out clean
While cake is baking prepare glaze by adding the juice of the other orange and 1/3 cup sugar to a microwave safe Pyrex or other bowl. Stir and microwave for 2-3 minutes until a thick, reduced syrup consistency is reached
Cool cake for 15 minutes, then spoon or brush glaze over top. Enjoy!
