Olive Oil Lemon Cake
1 ½ cups flour
2 tsp baking powder
½- 1 tsp salt
1 cup sugar
3 eggs
2 tsp lemon zest
2 tsp orange zest
¼ cup milk
¾ cup olive oil (extra virgin best for baking)
Heat oven to 350 degrees F and grease a 9-inch round cake pan; add parchment or waxed paper to bottom. Mix flour, salt and baking powder in a bowl and set aside. Beat sugar and eggs with a hand or stand mixer until light yellow, 2 minutes or so. Add zests and milk and beat well; slowly add olive oil and mix well. Add flour mixture until well blended. Pour into cake pan. Bake for 30-35 minutes until toothpick inserted comes out clean. Cool and sprinkle with powdered sugar and serve with berries if you like.
