Garlic Parmesan Oven Fries
Serves 6
4 potatoes, Russet, Yukon Gold or Sweet Potatoes
2 Tbsp Olive Oil
1 tsp paprika
½ tsp garlic powder
1 tsp coarse salt
½ tsp pepper
4 Tbsp dry parmesan cheese
1 Tbsp parsley
Clean potatoes and peel if preferred, can also leave peel on for more nutrition. Slice into wedges or strips and place in bowl with ice water for 30 minutes or overnight. Place a sheet pan into cold oven, then heat to 450 degrees. In a zippered disposable bag or bowl, mix olive oil, paprika, garlic powder, salt and pepper. After removing potato wedges from ice bath; drain and rub dry on towel or paper toweling. Place potato wedges in bag and zip close and shake until covered with oil and seasoning mixture. Place directly onto hot tray and bake until crisp; time varies on potato size; usually 15-20 minutes. Flip potatoes after 10 minutes. While potatoes are baking; place parmesan cheese and parsley into a large bowl; mix well. Remove potatoes from oven when crispy on outside and soft inside; place in bowl and toss to coat with cheese/parsley mixture. Serve with ketchup or favorite dipping sauce.
