Creamy Raspberry Dessert
For 2 servings: For 8 servings:
1 carton plain yogurt 32 ounces plain yogurt
1 cup frozen raspberries 4 cups frozen raspberries
¼ cup heavy whipping cream or ½ cup whipped topping 1 cup heavy whipping cream or 2 cup whipped topping
2 Tbsp instant vanilla pudding mix 1 small package instant vanilla pudding mix
1 tsp maple syrup 1 Tbsp maple syrup
½ tsp vanilla extract 2 tsp vanilla extract
2 Tbsp toasted almonds ¾ cups toasted almonds
If whipping your own cream, and want to do this by hand; place a pint size jar in freezer.
Toast almonds by placing in skillet on stove on medium heat, tossing often until start to brown. Turn off heat.
Mix together the yogurt, pudding mix, syrup and vanilla in medium bowl.
Whip cream by pouring whipping cream into cold jar; place on lid tightly and shake for around 4 minutes or until formed. Add whipped cream to pudding mixture and fold in raspberries.
Top with toasted almonds.
Keep refrigerated.
You can make this treat lower in sugar and fat by using sugar free pudding mix, fat free yogurt and low-fat whipped topping.
