Cran-Apple Almond Broccoli Slaw with Greek Yogurt Dressing
For 2-3 servings: Full batch 7-9 servings:
2 Cups slaw mix (broccoli or other mixed slaws great!) 6 cups slaw
½ of an apple, skin on and diced 2 apples
¼ cup sliced almonds 1 cup almonds
¼ cup craisins 1 cup craisins
Dressing: Dressing:
5 oz carton or 1/3 cup plain Greek yogurt 3, 5 oz cartons or 1 cup plain yogurt
1 Tbsp honey 3 Tbsp honey
2 tsp apple cider vinegar 2 Tbsp vinegar
1 tsp Dijon or any style mustard 3 tsp mustard
½ tsp salt 1 tsp salt
½ tsp pepper 1 tsp pepper (to taste)
Can add chopped green onions to top and a few more almonds for a garnish
Enjoy as a side dish, a topper for BBQ pulled pork or chicken sandwiches, or as a sauce for tuna, egg, or chicken salad, or as a spread for a sandwich.
