Caramelized Skillet Peaches
4-6 fresh peaches (peeled or unpeeled, pits removed and slices)
¼ cup maple syrup
½ tsp kosher salt ( or ¼ tsp table salt)
2 Tbsp lemon juice
4 Tbsp butter
1 tsp vanilla
Place sliced peaches into a bowl and add syrup, salt and lemon juice and stir well. Heat skillet, add butter and melt. Add peaches and cook on medium heat for 10 minutes, stirring occasionally. Add vanilla and turn off heat. Enjoy just as they are or try over ice cream, yogurt, pancakes, waffles or oatmeal. Refrigerate leftovers.
