Alice’s Chicken Fried Rice for 2
1 cup cooked rice
1 egg
¼ cup diced celery
¼ cup diced onion
¼ cup diced cooked chicken
3 Tbsp dried cranberries
3 Tbsp Olive Oil
1 Tbsp Soy Sauce
¼ cup chicken broth or water
Heat olive oil in non-stick frying pan or wok. Add ½ tsp of the soy sauce to the beaten egg and let run onto an even layer; turn and cook. Transfer to a plate. Using same pan, place back onto heat, saute celery and onion until softened. Add rice and heat through, add dried cranberries, peas, chicken and broth. Mix well, return egg and mix in. Serve and enjoy! Add more soy sauce to taste. Variation: Instead of chicken and dried cranberries; Alice says to try diced pork and pineapple tidbits!
